In this lecture, Carlo Overhulser will share his deep study of the history of salt in the Central Coast. Attendees will learn how Native Americans, then the Spanish, followed by the Chinese, and then entrepreneurs in the early 1900s harvested salt. Carlo will bring it full circle by sharing the practices he uses to handcraft salts from the Big Sur Coast.

About Our Speaker
Carlo Overhulser's salt journey began with the realization that we have access to almost everything we need right here on the Central Coast. Having worked in restaurants for over a quarter of his life, he looked into what organic options are available here, and it became clear that what we have, through the Salinas Valley and to the cliffs on the coast, the foundation of something we all want and should all have access to: quality ingredients that give us a better food experience.
Carlo became excited about how he could bring the wonders of salt to everyone and create new adventures for the palette. By introducing a variety of textures, aromas, colors, and flavors via the salt, accompanied by other select ingredients, he is able to bring micro-climates to the consumer.
